Since the main purpose of MVP is to test the idea as quickly as possible the key point here is your familiarity with the stack. If you've been coding Java for 20 years it might be a good choice for you. You'll need to spend no time to learn new syntax and concepts.
I personally follow this approach by using tech stack I'm most proficient with.
